Pronounced PSAH-ree stah KAR-voo-nah is Greek for grilled fish. Greeks love grilled fish and seafood, and with simple recipes that showcase the natural flavors. These are the grilled fish U and I had at Cyma, a Greek taverna. There were choices of how we wanted our fish---char-grilled or roasted cedar planked. We agreed on char-grilled salmon and swordfish. The salmon fillet was tender with buttery flavor while my swordfish was moist, meaty and sweet-flavored. The sauce was a simple concoction of olive oil, lemon juice, salt, oregano or thyme, and with a slice of lemon.
