Quesadillas


Mushrooms and Spinach Quesadillas---our appetizer at Cadi Shack Diner in Cebu last week.  This was a scrumptious vegetarian quesadillas.  I didn't know mushrooms and spinach go well together.  The tomato, onions and cilantro salsa was addicting.  The flavors of the salsa were reminiscent of Vietnamese nouc cham.

Chicken Quesadillas

If you haven't noticed it yet, I love Tex-Mex! My craving for Tex-Mex doesn't seem to let up. I can live on burritos, chimichanga, fajitas, and yes, quesadillas. When the bartender, Carlos, told us about their new Texas Quesadillas, I knew I wanted to try it.

The Texas Quesadilla was grilled chicken and cheese wrapped in toasted tortillas, with sour cream and salsa on the side. A plate of chicken quesadilla was supposedly just an appetizer. But paired with a small plate of Cobb Salad, I was too full to order anything else.

A quesadilla is a Mexican snack food made of toasted tortilla with melted cheese inside. But in addition to cheese, you can put practically anything in a quesadilla. Quesadilla is a Spanish word that literally means "little cheesy thing".
