Leftover Christmas ham...I'm still trying to demolish it. I brought slices to work for our afternoon snack of hot pan de sal and coffee, had them for breakfast on Friday, still a whole lot of slices left in the fridge. Yesterday, my neighbor suggested ampalaya with ham and beaten egg but there was no ampalaya in the house. Why not ginisang mongo with ham instead? Voila! Here it is...
